Sherrybarrel 500 l - Palo Cortado
Freshly emptied barrels of Palo Cortad sherry. The barrels were used for approx. 30 years. The staves of the freshly emptied barrels are still saturated with the unfiltered sherry. Production and characteristics:Palo Cortado is the result of an unusual and not fully understood development in the sherry cask. It often begins as a Fino or Amontillado before becoming a Palo Cortado due to natural processes. It combines the elegance and finesse of an Amontillado with the richness and complexity of an Oloroso.Aroma and taste:Palo Cortado has a wide range of aromas, from nutty and salty to intense notes of dried fruit and caramel. Palo Cortado is dry on the palate, but it can also have a subtle sweetness that sets it apart from other sherry varieties.Color:The color varies from a light amber to a deeper mahogany, depending on the length of time it has been aged in the barrel. Sherry Palo Cortado is a delicacy for lovers of dry sherry who appreciate the complexity and versatility of this unique drink. The barrels are fitted with a silicone bung as standard.Pre-used wooden barrels: Notches in the wood, external stress cracks or possibly an uneven bottom are not quality defects, but are rather determined by the nature of the construction and the previous use of the barrels. This does not affect the functionality of the barrel. We check the barrels very carefully for sensory and technical defects during the outgoing inspection. We accept no liability for cracks or fissures that occur during maturation. A possible and reasonable repair is not covered by guarantee. All pictures are examples and optical deviations are possible.
Sherrypipe 500 l - Cream - black
Cream is the blend between Oloroso and Pedro Ximénez and therefore tastes sweet. This type of sherry is classified as semi-sweet. The base wines are oxidatively matured. The taste of the sherry is full-bodied with a lot of pressure and persistent. The colour is deep gold and drifts into a brownish colour. In addition to dried raisin notes, there are also nutty, plum-like and even caramel aromas. The barrels were used for around 30 years. The staves of the freshly emptied barrels are still saturated with the unfiltered sherry. Coated with black breathable lacquer The barrels are equipped with a silicone bung by default. Used wooden barrels: Notches in the wood or, in certain circumstances, an uneven base, do not constitute a quality defect, but stem from the idiosyncrasies of the production method and the prior use of the barrels. The usage of the barrel will not be affected by those! The barrels are very carefully checked by us at the exit control against sensor and technical errors. We assume no liability for cracks or splits that occur during maturation. A possible and a reasonable repair is not under guarantee. Pictures are examples, colour variations are possible
Sherrypipe 500 l - Oloroso - black
Freshly emptied Oloroso sherry casks, ideal for storing and maturing whisky, brandy, grain, etc. Nice sweetness, full body flavour! The barrels were used for around 30 years. The staves of the freshly emptied barrels are still saturated with the unfiltered sherry. Made out of American White Oak. Based on the specific manufacturing method the Sherry develops a flavour rich of almonds and yeast, occasionally also reminding of hazelnut and walnut which is exclusively peculiar for this wine. The most characteristic for Sherries is that they are firstly produced from a dry white wine. This wine is treated with brandy after the agitation being completed and thus increased from originally 11 to 12 to 15 to 19.9 alcohol percentage. After that it ripens in unclosed 500 l wood barrels. In order to sweet the Sherries Muscatel or Pedro Ximenez wines will be added before the filling. The grapes of this varietal are not immediately pressed after the harvest but first dried. The juice of these grapes is very concentrated and the yeast does not turn all sugar into alcohol. During the Sherry manufacturing process exclusively Palomino, Moscatel and Pedro Ximenez can be used, other grape varieties are only cultivated for table wine and ordinary table wine production in the province of Cádiz. Sherry is blended from wines of different years during its barrel ripening process. Oloroso is produced without bloom layer by oxidation and is darker and stronger in its flavour and in principle rather dry, with amber until mahogany colour and a nice nut flavour (oloroso). The alcohol level of an Oloroso amounts to 17 to 20 % vol. Barrel will be deliverd with a silicone bung. Freshly emptied 225 l barrels (French oak) from a 4 year old red Marsala from Sicily. Marsala is a Sicillian sweet wine with a D.O.C. status. The wine was named after the seaport Marsala. The name originates from the Arabic words “Marsa allah” and means “port of god”. Originally the Marsala was mae only in the province Trapani. By now it’s allowed to be made in the provinces Palermo and Agrigirnt. Discovered was the wine from a son of an English merchant. He realized the potential of the sweet wine to compete with Madeira and Sherry. That’s the reason why he started to import Marsala to England in 1773. The rare red Marsala is made of Nerello Mascalese, Nero d’Avola and Perricone. During maturing they add brandy or thickened grape juice and it is blended with older Marsala. After that the wine is stored for 10 Years in oak barrel aging only. These port wine barrels from Portugal, or to be more precise precisely from the Duoro Valley, offer an explosion of flavours. The barrels were used for Lagrima - the white port wine. With a high residual sugar content of up to 140 g/l, the full glory of the sweet fruit unfolds. The white grapes are macerated in the old port wine tradition. The aroma is anything but flat, instead it is composed of different notes: the golden wine brings an opulence of deep floral rose notes, delicate wood, light toffee, a hint of honey honey, rounded off with a very subtle salty taste on the palate. As your product matures within the white port wine barrel, the developing structure attains more complex depths that are interesting and extravagant at the same time. By default, the drums are equipped with a used wooden or plastic bung. If you want a new silicone bung, you can order it under accessories (type standard - C16).
