Production and characteristics:Fino is made from the Palomino grape and undergoes a special ageing process known as "biological ageing". Production and characteristics:Palo Cortado is the result of an unusual and not fully understood development in the sherry cask. Cream is the blend between Oloroso and Pedro Ximénez and therefore tastes sweet. This type of sherry is classified as semi-sweet. The base wines are oxidatively matured. The taste of the sherry is full-bodied with a lot of pressure and persistent. The colour is deep gold and drifts into a brownish colour. In addition to dried raisin notes, there are also nutty, plum-like and even caramel aromas. The barrels were used for around 30 years. Freshly emptied Oloroso sherry casks, ideal for storing and maturing whisky, brandy, grain, etc. Nice sweetness, full body flavour! The barrels were used for around 30 years. The staves of the freshly emptied barrels are still saturated with the unfiltered sherry. Made out of American White Oak. Based on the specific manufacturing method the Sherry develops a flavour rich of almonds and yeast, occasionally also reminding of hazelnut and walnut which is exclusively peculiar for this wine.The most characteristic for Sherries is that they are firstly produced from a dry white wine. This wine is treated with brandy after the agitation being completed and thus increased from originally 11 to 12 to 15 to 19.9 alcohol percentage. After that it ripens in unclosed 500 l wood barrels. In order to sweet the Sherries Muscatel or Pedro Ximenez wines will be added before the filling. The grapes of this varietal are not immediately pressed after the harvest but first dried. The juice of these grapes is very concentrated and the yeast does not turn all sugar into alcohol. During the Sherry manufacturing process exclusively Palomino, Moscatel and Pedro Ximenez can be used, other grape varieties are only cultivated for table wine and ordinary table wine production in the province of Cádiz. Sherry is blended from wines of different years during its barrel ripening process. Oloroso is produced without bloom layer by oxidation and is darker and stronger in its flavour and in principle rather dry, with amber until mahogany colour and a nice nut flavour (oloroso). The alcohol level of an Oloroso amounts to 17 to 20 % vol. Barrel will be deliverd with a silicone bung. Barrels from sherry or sweet wine barrels are highly sought-after due to their aromatic and structural qualities. Sweet wine barrels in particular, which often come from southern Europe, impress with their sweet, concentrated and sometimes fresh aromas. These barrels are imported directly from renowned producers and are only offered in winter to ensure freshness.

Sherry barrels are known for their bitter-sweet notes, which they pass on to the stored product. The freshly emptied barrels, which are available in sizes from 500 to 3 liters, are particularly suitable for distillates and can ideally accentuate the taste of the end product. There are also barrels that have been pre-filled with a sherry blend for at least six months to ensure a particularly intense transfer of aromas.
