EDER - FassStolz® 600 l Turnable Micro Fermenter - German Oak
600 liter barrels, made of fine graine, slowly dried German oak. With stainless steel dome for filling with mash and permanently installed bogy for rotations during fermentation processes. This rotatable fermenter is produced in our own workshop. It is transportable with forklifts and lifting carts. Made from seasoned oak wood, origin Palatinate Forest / Northern Vosges!Fine-grained on red sandstone grown about 200 years, sustainably logged. The volume of 600 liters means a chance to ferment small high quality batches. The toasting profile can be customized, following your wishes, and is optimized for burgundy style wines in our default setting. A great opportunity to give your freshly mashed lots of your individual style from the very beginning. The toasting has a focus on color stabilization and reinforcement of the natural structure of the becoming wine. Through the multiple usage over a period of time this barrel gives you the possibility to implement your individual style through an ongoing evolution of your fermenter with every new batch. Take for granted, that your individual label and emblem can be lasered on your personal barrel right here in our cooperage.
EDER - FassStolz® Ash barrel 225 l - 500 l
They are made from Ash wood (Fraxinus excelsior), an old wood type for barrel-making. The barrels are for aging of distillates, such as grain and fruit spirits, but without release some of its color. This wood ensures a balanced maturation through a restrained micro-oxygenation without colorants. The distillate matures in the pureness of its nature and the taste is pleasantly soft.
EDER - FassStolz® Barrel Bell 390 l
Round and oval barrels are standard. We are proud to present the latest innovation from the Wilhelm Eder cooperage – the Barrel Bell. The special cask shape looks amazing in any distillery and has been designed to give exciting results after maturation. This bell barrel has been especially built as an ageing barrel for distillates and wines. Painstakingly produced, this barrel is an excellent example of what is achievable in our cooperage. Masters of their trade ply their work here. The fine-grained oak has been seasoned for several years. This allows us to concentrate not only on your distillate or wine but also on the shape of your barrel, which is all about aesthetics and design. We prove that a barrel does not necessarily always have to be round or oval. The silicon bung is fitted to the barrel lid.The appropriate wooden barrel storage can be ordered under Accessories.
EDER - FassStolz® Bourbon barrel 200 l
A 200 l barrel from the EDER - FassStolz® series made of German oak (Palatinate Forest), manufactured in the Wilhelm Eder cooperage. The oak is fine-grained on red limestone grown about 200 years, sustainably logged. The innovation from the Wilhelm Eder cooperage - A 200 l barrel made of Palatinate oak. With this barrel we offer an elegant alternative to the American Standard Barrel (ASB), for the aging of whiskey and other distillates. The advantages: The oak wood comes from our homeland, the Palatinate Forest, which for us means short transport distances. The staves are mirror-cut in our own sawmill. The stave thickness of 27 mm has the advantage that the maturation is elegant. In addition, the barrel is as durable as a barrique barrel, which is a plus in terms of sustainability. These barrels are toasted with the classic gas toast - the charring. In the standard segment, these barrels are equipped with Char 3. The flavor aromas are those typical of bourbon such as vanilla, toasty characters, nutty notes paired with sweet smoky aromas. The color release is great and ends in a deep golden hueThe barrel is equipped with a silicone bung and hot galvanized hoops.
EDER - FassStolz® Cherry barrel 225 l
Made from wild cherry tree trunks of the bird cherry Prunus Avium. The barrels are fitted with hot-dip galvanized hoops, lightly toasted on the inside. Cherry is still the distiller’s most favorable taste. And that not only because of the fruit’s fertility but also because it is an inherent part of the culinary culture of Southern Germany and Switzerland. Since 150 years, the particular climatic conditions there and the soil conditions that the cherry trees need to enforce the fruit’s most aromatic evolvement have been and are still appreciated. The sweet cherry has not for nothing been named tree of the year 2010. It is a stone fruit and belongs to the rose family. The “kirsch” is characterized by its complex taste that takes long at its end as well as the decent and subtle flavor. Initiates describe the favor during tastings often as fleshy, fruity, chocolate, sourly aromatic, juicy, lusty or nuttily aromatic. The most crucial point for the distillers is, however, also the question if “stonetone”, i. e. an almond or marchpane flavor is desired. The question if this flavor or homogenous kirsch with a discrete fruit nature should be pursued is highly discussed. Thankfully one should say. Cause: As is generally known, tastes are different. Note: Cherry wood in the area of distillate is not always easy to process, this requires the growth forms of the cherry tree.To support the tightness, we paint the small cherry wooden barrels just like our large barrels with a breathable, water-soluble lacquer, which meets all certification requirements in the food industry and barrel construction! With staves made from German oak and heads made from acacia wood (Robinia pseudoacatia from the Palatinate Forest), this barrel brings freshness and supports the fruit.Fresh & Fruity is a barrel specially designed for the ageing of white wine to emphasize the aromatic finesse of this type of wine. The barrel is made from different types of wood (acacia for the heads and oak for the staves).The acacia gives the white wine the necessary “freshness” and emphasizes the slightly floral flavours, whereas the oak gives the wine more complex woody notes and thus a greater body.Particularly recommended for the varieties: Chardonnay, Sauvignon blanc, Sémillon, Muscat, Marsanne, Roussane, Viognier, Pinot Gris and Riesling.Barrel profile:Structure: Preserves, strengthens and maintains the elegant fruit notes of the wines.Aroma: Light notes of lime, white blooming flowers, fresh and elegant aromas.Usage:Fermentation: Recommended in these barrels, either with the complete or a partial quantity.Recommended ageing: 5 to 8 months on the fine lees.Draining: Only pump the wine out of the barrel once at the end of ageing. Distillate barrels made of air- dried and fine – grain oak, an ideal oak for aging of your spirits or distillate. The barrel interior is toasted. It provides a nice golden-brown color and a unique character of barrel aging. As an option you can choose a spigot as accessories. The barrels up to 20 l capacity are light to medium toasted. For the 28-liter barrels, you can optionally choose a stronger toasting (Medium Plus). Please note, the content indicated for wooden casks do not correspond with net capacity. It was the Romans who probably brought us the sweet chestnut from the Caucasus. In the meantime, the warmth-loving tree has become native to southern Germany and especially to the Palatinate Forest.Heat-loving in this context does not mean dry-loving!Our wood for our barrel series "Eder FassStolz Kastanie" comes from one of the most beautiful and best areas in Germany for the sweet chestnut, the Wasgau near the Trifels Castle in the heart of the Palatinate Forest!Year after year, with the end of the vegetation phase from October, November onwards, we work together with the foresters to select some of these trees, sometimes several hundred years old, under the aspect of sustainability and climate protection, in order to produce particularly valuable wine and distillate barrels from them.By the way, the chestnut was the tree of the year 2018!The fruit of the trees is also used in culinary delights, whether in soup, bread or in some game dishes! The chestnut gives a full, round aroma without, however, bringing the sometimes too many tannins of the oak noticeably on the tongue. Especially in distillates one tastes the depth, the forest and the fruit of the chestnut paired with honey notes. The chestnut gives a strong golden yellow color to the distillate.For strong structured red wines the chestnut barrel offers a great maturity as well as a round sweetness. We recommend the chestnut barrels especially in the toasting stages Medium to Forte!The barrel is equipped with a silicone bung as standard.

The barrel is produced out of kiri wood in our cooperage.Kiri wood is a highly aromatic wood with considerable cellulose and lignin content.Paired with heat-reduced toast, this ensures a significant splitting of the sugar molecules on the surface of the wood while at the same time preventing guaiacol smoke aromas.The result are wooden barrels that offer strong flavours in the form of sweetness, vanilla and fruit when matured with distillates, wines or beers.Our production of kiri wood barrels is another one of our innovative ideas. Widely unknown, the kiri is a cherry tree originating from Asia and is the fastest growing tree in the world. German innovation companies are now also planting this special tree under optimal growth conditions. Growing up to 5 metres per year, the kiri tree produces wood at 10 times the rate of oak.
