The wood and its organoleptic characteristics The wood for the staves is of best quality and is selected from huge forests of Europe. Before being exported to Merpins where the aging process takes place, the wood is transformed into staves on site. The know-how of our coopers enables the creation of these exclusive SEGUIN MOREAU caucasian oak barrels. European oak is perfect for producing wines that are characterized by freshness and their terroir. Structured tannins in a tight and fine combination and aromas that are relatively low in lactones highlighten the variety of the grape’s character. Our recommendations for usage We recommend this barrel for lively white wines with intense aromatic notes, such as Sauvignon Blanc, Bordeaux or Chenin Blanc originating from the Loire Valley. Elegant red wines such as Merlot, Bordeaux or Pinot Noir are enhanced. The wood comes from trees with very fine pores that grow in the forests of Minnesota, Iowa, Missouri, Ohio and Kentucky. First, they are inspected at our centre in Perryville, Missouri, before being stored outdoors. The wood is then transported to our cooperage in Napa, California, to be used in the production of barrels according to the traditional SEGUIN MOREAU method. The wood and its sensory properties: American oak has a methyl octalactone isomer content that is 2-5 times higher than European oak. The presence of this substance gives American oak its high aromatic potential. The reduction of polyosides during toasting leads to higher proportions of furan derivatives and enol molecules, which produce the much-appreciated ‘toasted aromas’. Our recommendation for use: Due to its high aroma content and low ellagitannin content, SEGUIN MOREAU's American oak barrel is particularly recommended for short ageing periods. This reduces the addition of tannins while increasing the wine's aromatic intensity. Recommended for Chardonnay, Zinfandel, Syrah and all Bordeaux wines.
