The Cross Cut Staves are an innovation in the field of oak alternatives from America. A faster extraction of flavoring and color substances is guaranteed by the unique cross cuts on the staves. The staves have been developed by fine northern oak which are part of the SEGUINMOREAU group since 2014. The staves are made of American White Oak and they are toasted with a convection oven. High Extract Mini Staves - ēvOAK
The mini-staves, 40 pieces per packing unit, are delivered in infusion bags. These bags are sealed in plastic and food safe packages. These staves can be applied directly to the wine. High Mocha:Displays an intense array of cocoa, coffee and vanilla aromas. Aroma: High Vanilla:French oak, applied to all types of Burgundy, balances and accentuates the aroma of the fruit, very good results in producing Pinot Noir. Aroma: High Toast: French oak. Strong aroma, roasty and toasty aromas are delivered to the wine. Using these staves, a very nice toffee and creamy coffee aroma is achieved. Aroma: High Spice: French oak. Cuvée 2American Oak. This stave transformes flavours such as toasted marshmallows, vanilla, crème brûlée and nougat. The body of the wine becomes fuller than using Cuvée 1 and creates a creamier mouthfeel and notes. This stave is recommended for white and red wines. Mini Staves High Caramel - ēvOAK
Mini staves of 40 pieces each in a shrink-wrapped food-safe infusion bagThe mini staves are supplied 40 at a time in an infusion bag. This bag is shrink-wrapped in plastic and packaged in food-safe packaging. The High Caramel Staves give off a wide range of complex and varied aromas with a focus on caramel. Taste of strong toffee and creamy coffee notes paired with caramel burnt sugar, roasted nuts and slightly smoky aromas in the background. The alternative product for all applications where an exuberant mouthfeel and dessert notes are required. It can be used in both wine and distillates, and the extraction time is quite short compared to barrels. When used in wooden barrels, well-integrated maturation is possible in addition to maceration.

No. 44 Stave Mini Infrared:French oak. Excellent for rich red wines that require elegant wood. Roasted coffee and dark chocolate aromas are characteristic for this stave - Bordeaux style. Aroma: No. 45 Stave Mini Infrared Rhône:French oak. Very good fitting to mature, aromatic types of wine such as Syrah that need to be supported by soft tannins. Temperature was reduced when producing the toast limits. The structure decreases the structure of tannin and creates a diversity of flavours. Aroma: No. 46 Stave Mini Infrared Burgundy:French oak Supplies creamy, toasty and subtile smoke flavours that are particularly desired in Burgundy. This fermentation tannin is designed to add subtle aromas and a smooth, round mouthfeel to heavier whites and lighter reds. It is a blend of gallotannins and ellagitannins with a total polyphenolic content of 92-97% that will reduce risk of oxidation from botrytis and reduce pyrazines and vegetal character in prone varieties. Use in finishing for delicate oak aromas and increase structure and smoothness in the finish.

trū/tan f2 is a blend of hydrolysable tannins composed of gallotannins and ellagitannins that has a total tannin range from 92% to 97%, making this product ideal for fermentation of red and white musts. It can protect fermentations of grapes infected with molds because it inhibits laccase activity. With this high tannin content, it will prevent oxidation protecting white wines from browning. It improves mouthfeel and texture in white wines and has subtle effects in red wines.

trū/tan fi is a hydrolysable blend of gallotannins and ellagitannins, with a total tannin range of 95% to 99%. This tannin blend was developed with fermentations in mind — its high tannin content helps preserve aromatics in whites and benefits color stability in reds. trū/tan fi is also useful during finishing at lower dosage rates to accentuate fruit by bringing it to the forefront of the aromatic profile. The tannin addition preserves aromatic character through antioxidant reactions and increases overall structure.

trū/tan ib is a blend of 80% to 85% tannin designed to enhance fruit perception by providing a rich sweetness to the aromatic character and flavor of whites, rosés, and red wines. The proprietary toasting method of the oak results in a polyphenol profile that rapidly integrates with the native grape tannins, complementing their structure by reacting with them to create new, complex tannins that are velvety and smooth. Due to its high reactivity, trū/tan ib acts quickly to make wines ready for bottlings sooner. Use at any point during maturation.

When more complexity and better middle palate is desired, trū/tan rf is the product of choice because of its greater contribution to polymerization. It is ideal for balancing the structure of reserve wines. This hydrolysable tannin blend of gallotannins and ellagitannins has a total tannin range from 81% to 86%, it is a perfect product for aging and finishing.

Even at the lowest of addition rates, trū/tan vb offers an increase in volume and added roundness to the mouthfeel. The fruit becomes more complex in aroma, which adds sophistication to the finished wine, and the mid-palate is broadened through the preservation of varietal characters. The life of the wine is also extended. This hydrolysable blend of gallotannins and ellagitannins contains between 83% to 88% total tannin and is well suited to both aging and finishing.
