Amaronebarrel 225 l
Freshly emptied 225 l Amarone barrels from Italy. Amarone is a special red wine from Italy (region Veneto), which is produced by a unique process. The grapes from which Amarone is made dry for several months on wooden racks or straw mats in ventilated storage rooms or under roofs. During this time they are turned and layered by hand. Only shortly before the grapes dry to raisins, the pressing begins. The wine then ages for at least two more years in wooden barrels. The result is a heavy, powerful, almost creamy wine with a deep red colour and a great variety of aromas. The wine bears the name because of its slightly bitter note. Bitter means "amaro" in Italian. Barrel will be deliverd with a wooden or silicon bung. CultivationAmarone vines are grown north west of Verona – between Lake Garda and Verona – in the vineyards if Valpolicella. Amarone della Valpolicella wines hold the highest Italian quality branding DOCG (Denominatione di Origine Controllata e Garantita) since 1968. Amarone always consists of following vines:- Corvina- Rondinella ProductionAccording to the Appassimento or Recioto technique, the grapes will be air dried in good ventilated storages for 2-4 months. Hence much sugar and extractives will be left and high concentrated wines will be produced. The fermentation stops very soon and is followed by a sweet Amarone with 15 % Alc. Vol.. Some alcohol-resistend yeast will transform the remaining sugar in more alcohol if the mash gets more time to rest. A dry Amarone with 16-17% Alc. Vol. is the result. This technique is called “Miracolo dell’Amarone”. Eder STR barrel 225 l - ex red wine
STR Cask - Shave, Toast, Re-charred. A cask that offers a combo of fresh Virgin Oak and first-fill red wine cask. As in new oak casks, the whiskey matures faster than in used casks. It still benefits from the fruity red wine notes of the pre-ageing. Dr. Jim Swan, a chemist and biologist by training and a passionate whisky expert, developed this special process. ShaveThe first step is to "shave" the cask. First, the cask is opened and the inner layer, heavily saturated with red wine, is scraped out. This gives the cask a combination of light red wine aromas and fresh oak (virgin oak).ToastThe exposed interior of the barrel is now toasted anew, by burning oak chips from old whiskey barrels. During this process, the sugar and vanillin in the oak caramelize and corresponding spicy and sweet notes are particularly accentuated. Re-charrFinally, the barrels are burned out once again to release as many aromas as possible and at the same time remove unwanted flavor carriers such as tart tannins and chemical compounds like lignin, cellulose, or hemicellulose. Freshly emptied 500 L red wine barrels from Rioja, previously filled in Spain. The wine with the protected designation of origin DOCa Rioja (Denominación de Origen Calificada) is produced in the Rioja wine region in northern Spain. The unique mix of Atlantic, Mediterranean, and continental climates allows for a wide variety of wine styles. Grape varieties: Rioja is made primarily from Tempranillo, which may be complemented by Garnacha, Mazuelo (Carignan), Graciano, and Maturana Tinta. Freshly emptied 225 l barrels (French oak) from a 4 year old red Marsala from Sicily. Marsala is a Sicillian sweet wine with a D.O.C. status. The wine was named after the seaport Marsala. The name originates from the Arabic words “Marsa allah” and means “port of god”. Originally the Marsala was mae only in the province Trapani. By now it’s allowed to be made in the provinces Palermo and Agrigirnt. Discovered was the wine from a son of an English merchant. He realized the potential of the sweet wine to compete with Madeira and Sherry. That’s the reason why he started to import Marsala to England in 1773. The rare red Marsala is made of Nerello Mascalese, Nero d’Avola and Perricone. During maturing they add brandy or thickened grape juice and it is blended with older Marsala. After that the wine is stored for 10 Years in oak barrel aging only. This Portuguese speciality inspires not only by its rarity, but also with your incomparably exciting sensory possibilities. Already for 20 years these barrels are in use, the last 10 years of aging of liqueur wine from Muscatel (type Roxo & Branco). The barrels were used for aging under the care of Companhia Agrícola do Sanguinhal in the Óbidos region. The high sugar content of 38 g/l shows a clear direction. Not only does sugar act as a natural flavor enhancer, but in the form of these pre-used barrels, it brings an exciting aroma structure and thus basis for your distillate. These high aromatic barrels are made of French Limousin and have been filled with white Pineau des Charentes – a perfect choice for refilling and aging of your whisky, Korn and Jenever. History According to legend, during the harvest of 1589, a winemaker accidentally added grape must into a barrel with eau de vie. The mixture was duly returned to the cellars for fermentation and a few years later, the barrel was retrieved and was found to contain the drink that is now associated with the region of Charentes. These port wine barrels from Portugal, or to be more precise precisely from the Duoro Valley, offer an explosion of flavours. The barrels were used for Lagrima - the white port wine. With a high residual sugar content of up to 140 g/l, the full glory of the sweet fruit unfolds. The white grapes are macerated in the old port wine tradition. The aroma is anything but flat, instead it is composed of different notes: the golden wine brings an opulence of deep floral rose notes, delicate wood, light toffee, a hint of honey honey, rounded off with a very subtle salty taste on the palate. As your product matures within the white port wine barrel, the developing structure attains more complex depths that are interesting and extravagant at the same time.
