Freshly emptied 500 L Genever barrels from the Netherlands. The barrels were first filled with Sherry and then used for Genever during their second fill in the Netherlands.
This special 500-liter Genever barrel tells an aromatic story in two acts: originally seasoned with Sherry, the wood carries a deeply rooted sweet and spicy foundation, now combined with the characteristic juniper notes of Genever.
The previous Sherry fill has already imparted intense nuances of dried fruits, raisins, figs, and delicate caramel sweetness to the barrel. Subtle hints of nuts, oak, and an elegant oxidative note add depth and complexity.
In combination with Genever, this creates a fascinating interplay of aromas: the classic, slightly malty and juniper-driven notes of Genever are gently rounded and enhanced by the warm, sweet Sherry influence. The result is a harmonious balance of spicy freshness and velvety sweetness – complex, smooth, and with a long finish.

As standard, the barrels are fitted with a used wooden or plastic bung. If you require a new silicone bung, it can be ordered separately (type Standard – C16).
Pre-used wooden barrels: grooves in the wood, external stress cracks, or in some cases an uneven base are not quality defects, but rather a result of the construction method and prior use of the barrels. The functionality of the barrel is not affected. All barrels are carefully inspected by us for sensory and technical quality before dispatch. We do not assume liability for cracks or leaks that may occur during maturation. Any potential and reasonable repair is not covered under warranty.

The small sherry barrels (3 l - 50 l) of new European oak are first steamed by us to soften the existing tannin. Then they are filled for up to 12 months with sherry of the cream variety, which we purchase in bulk directly from selected bodegas in Spain. The barrels are stored for aging at our facility in Bad Dürkheim.After your order the barrels will be freshly emptied and dispatched. Freshly emptied Oloroso sherry casks, ideal for storing and maturing whisky, brandy, grain, etc. Nice sweetness, full body flavour! The barrels were used for around 30 years. The staves of the freshly emptied barrels are still saturated with the unfiltered sherry. Made out of American White Oak. Based on the specific manufacturing method the Sherry develops a flavour rich of almonds and yeast, occasionally also reminding of hazelnut and walnut which is exclusively peculiar for this wine.The most characteristic for Sherries is that they are firstly produced from a dry white wine. This wine is treated with brandy after the agitation being completed and thus increased from originally 11 to 12 to 15 to 19.9 alcohol percentage. After that it ripens in unclosed 500 l wood barrels. In order to sweet the Sherries Muscatel or Pedro Ximenez wines will be added before the filling. The grapes of this varietal are not immediately pressed after the harvest but first dried. The juice of these grapes is very concentrated and the yeast does not turn all sugar into alcohol. During the Sherry manufacturing process exclusively Palomino, Moscatel and Pedro Ximenez can be used, other grape varieties are only cultivated for table wine and ordinary table wine production in the province of Cádiz. Sherry is blended from wines of different years during its barrel ripening process. Oloroso is produced without bloom layer by oxidation and is darker and stronger in its flavour and in principle rather dry, with amber until mahogany colour and a nice nut flavour (oloroso).
