Fruit brandy is more than just “distilled alcohol from fruit.” It’s an aromatic reflection of its origin. Aging in wooden barrels adds depth, roundness, and character—without masking the fruit’s natural essence. Choosing the right barrel determines whether the spirit develops floral elegance, nutty warmth, or sweet vanilla notes. 

Every type of wood brings its own aromas. Every barrel size affects oxidation. Every level of toasting changes the expression of the distillate.

Cherry Wood Barrels – A Classic for Stone Fruit Brandies

Cherry wood has long been a favorite for distillates made from cherries, plums, or apricots.

At Wilhelm Eder, we use only carefully selected cherry wood from local forests. Each barrel—ranging from 30 to 225 liters—is handcrafted and gently toasted to preserve the elegance of the distillate.

Made of wild cherry wood - Peunus Avium. Barrels equipped with galvanized hoops. Toasting light. Cherry is still the distiller’s most favorable taste. And that not only because of the fruit’s fertility but also because it is an inherent part of the culinary culture of Southern Germany and Switzerland. Since 150 years, the particular climatic conditions there and the soil conditions that the cherry trees need to enforce the fruit’s most aromatic evolvement have been and are still appreciated. The sweet cherry has not for nothing been named tree of the year 2010. It is a stone fruit and belongs to the rose family. The “kirsch” is characterized by its complex taste that takes long at its end as well as the decent and subtle flavor. Initiates describe the favor during tastings often as fleshy, fruity, chocolate, sourly aromatic, juicy, lusty or nuttily aromatic. The most crucial point for the distillers is, however, also the question if “stonetone”, i. e. an almond or marchpane flavor is desired. The question if this flavor or homogenous kirsch with a discrete fruit nature should be pursued is highly discussed. Thankfully one should say. Cause: As is generally known, tastes are different. Note:Cherry wood in the area of distillate is not always easy to process, this requires the growth forms of the cherry tree. To support the tightness, we paint the small cherry wooden barrels just like our large barrels with a breathable, water-soluble lacquer, which meets all certification requirements in the food industry and barrel construction!Please note, the content indicated for wooden casks do not correspond with net capacity. From selected, freshly emptied, highly aromatic barrels in the original sizes we manufacture the small reclaim barrels in our Wilhelm Eder cooperage. The barrels are made to order. In this way, we ensure that you also benefit from the aroma package of the pre-packaging from the small reclaims. We do not produce the deconstructions in stock! We keep our promise of freshness and produce the ordered barrels once a month  in our cooperage for you. For this reason, the production time may be more than 30 days. Content sizes: 30 l - 50 l - 100 l Varietal purity: The respective barrel is exclusively reclaimed from a large original barrel, no other woods are used. Freshness promise: With our freshness promise we guarantee you to rebuild only freshly emptied barrels after we receive your order. Barrel heads: The barrel heads of the rebuilds are made of the bottom staves of the original barrels. Silicone bung: All reconditioned barrels are equipped with a silicone bung. Wilhelm Eder Cooperage: The construction of the barrels is done in our Wilhelm Eder Cooperage by experienced, trained coopers. Freshly emptied 225 l Amarone barrels from Italy. Amarone is a special red wine from Italy (region Veneto), which is produced by a unique process. The grapes from which Amarone is made dry for several months on wooden racks or straw mats in ventilated storage rooms or under roofs. During this time they are turned and layered by hand. Only shortly before the grapes dry to raisins, the pressing begins. The wine then ages for at least two more years in wooden barrels. The result is a heavy, powerful, almost creamy wine with a deep red colour and a great variety of aromas. The wine bears the name because of its slightly bitter note. Bitter means "amaro" in Italian. Barrel will be deliverd with a wooden or silicon bung. CultivationAmarone vines are grown north west of Verona – between Lake Garda and Verona – in the vineyards if Valpolicella. Amarone della Valpolicella wines hold the highest Italian quality branding DOCG (Denominatione di Origine Controllata e Garantita) since 1968. Amarone always consists of following vines:- Corvina- Rondinella ProductionAccording to the Appassimento or Recioto technique, the grapes will be air dried in good ventilated storages for 2-4 months. Hence much sugar and extractives will be left and high concentrated wines will be produced. The fermentation stops very soon and is followed by a sweet Amarone with 15 % Alc. Vol.. Some alcohol-resistend yeast will transform the remaining sugar in more alcohol if the mash gets more time to rest. A dry Amarone with 16-17% Alc. Vol. is the result. This technique is called “Miracolo dell’Amarone”. Bourbon barrel, freshly emptied ca. 190 l, from the distillery Old Forester in the USA.Barrels made of American oak, excellent to age Whisky, Wodka, Korn, Jenever, Beer distillate and others The Old Forester Distillery was founded 1870 from George Garvin Brown and has been developed through the years to the longest continous Bourbon making distillery in the US. With the head quarter in Louisville, Kentucky all process is done at the distillery, mashing, barrel making, distillation and aging of the Bourbon. Today Old Forster is the hand crafted brand at Brown Foreman ! By default, the barrels are equipped with a used wooden or plastic bung. Bourbon barrel 190 l - Old Forester 1920 Bourbon

Bourbon barrel, freshly emptied ca. 190 l, from the distillery Old Forester in the USA. Old Forester 1920 Prohibition Style Whisky is a product whose name says it all. To understand its significance, one must look back to the year 1920 and the “Volstead Act of 1920.” During Prohibition in the United States, only six distilleries in Kentucky were permitted to continue distilling bourbon for medicinal purposes—Old Forester among them. It is also the only bourbon that was sold by the same company before, during, and after Prohibition. What makes it special: during Prohibition, the whisky was only allowed to be bottled at 100 proof (50% ABV). Since the whisky entered the barrel at 100 proof, it reached a barrel strength of 115 proof (57.5% ABV) after the angel’s share. Freshly emptied 190 l bourbon barrel from the Buffalo Trace Distillery - Sazerac Rye. Rye 18 yr Specialty / LTD Select American Oak ONCE Sazerac Rye is one of the oldest whiskies in America and part of the annual Buffalo Trace Antique Collection. This bottling comes from New Orleans and dates back to the time when toddies with rye whiskey and Peychauds Bitters were served in the famous Sazerac Coffee House. The resulting cocktail, the Sazerac, is one of America's oldest drinks and gives its name to this fantastic whiskey. It has a pleasantly complex aroma with notes of clove, vanilla, candied fruit and citrus. The long maturation period gives it a unique flavor development and makes it a sought-after bourbon for connoisseurs and collectors.The barrels are fitted with a used wooden or plastic stopper as standard. Freshly emptied bourbon barrel 190 l from the Buffalo Trace Distillery - Stagg Junior. This bourbon is an underrated and excellent Whiskey from the USA. It is unfiltered and comes from the Buffalo Trace Distillery with a 200-year Whiskey tradition. The cask offers warm spicy notes, a balanced vanilla sweetness, brown sugar and excellent grain notes. A fruity undertone reminiscent of juicy cherries rounds out the flavour profile. A winner for your distillate and beer. By default, the drums are equipped with a used wooden or plastic bung. Wild Turkey has a deep auburn color as it’s aged longer in barrels with the deepest char (#4, also known as alligator char) You’ll smell slight tones of deep vanilla and oak with traces of citrus and toffee on top. Wild Turkey is rich with vanilla and caramel with notes of toffee and light smoke It is known for its long, rich, and full-bodied finish. In 1940 Thomas McCarthy, one of the managers of the Ripy Distillery, brought whiskey from his own company to the turkey hunt. His friends liked the whiskey so much that the following year they asked him to bring back some of the "Wild Turkey" whiskey for hunting. Nestled amid the rolling hills of bluegrass and thoroughbred farms sits the historic Woodford Reserve Distillery. One of Kentucky’s oldest distilleries, the present day Woodford Reserve Distillery is built on history, sitting on Kentucky’s oldest distilling site where Elijah Pepper began crafting whiskey in 1812. Double Oak:An innovative approach to twice-barreled bourbon creates the rich and colorful flavor of Woodford Reserve Double Oaked. Uniquely matured in separate, charred oak barrels – the second barrel deeply toasted before a light charring – extracts additional amounts of soft, sweet oak character. Pre-Used Barrels – Maturation with a Story

Acacia-Ash Barrels – Aromatic Balance with Finesse

A unique innovation from our cooperage: hybrid barrels made with ash staves and acacia heads. Perfect for brandies from pome fruits like apples and pears. 

Effect on the spirit: 

  • Ash: promotes mild aging with little color influence
  • Acacia: adds floral and honeyed aromas 
  • Result: subtle sweetness and refined complexity 

These barrels offer a nuanced maturation, ideal for distillers who value precision and elegance.

An innovation from our cooperage. A special settlement for aging  fine distillates. The staves are made of ash and the barrel heads are made of acacia (robinia). The barrels were also medium toasted on the inside on the same woods by fire. All woods come from the Palatinate forest. A barrel made in our cooperage under our own brand EDER - FassStolz®. The barrel consists exclusively of the air-dried deciduous wood of the Elsbeere (Sorbus torminalis). The special distillate barrel is equipped with hot-dip galvanised hoops, treated with a breathable, food-certified glaze on the outside and lightly toasted on the inside.Origin: Germany from certified forestryThe Elsbeere, among other things also "beautiful Else" called, is a rare deciduous tree species. It is one of the most expensive deciduous trees and provides a very high-quality wood of light white-yellowish to slightly reddish colour. These barrels were made in our cooperage from wild pear tree trunks Pyrus pyraster.The barrels are fitted with hot-dip galvanized hoops and are lightly toasted on the inside. Barrique made of chestnut wood 228 l with silicone bung. One barrel equipped with a double toast for full volume and power. For high character in mouthfeel and complexity. Ideal for maturing grain, whisky and brandies. It was the Romans who probably brought us the chestnut from the Caucasus. In the meantime, the warmth-loving tree has become native to southern Germany and especially to the Palatinate Forest.Heat-loving in this context does not mean dry-loving!Our wood for our barrel series "Eder FassStolz® Kastanie" comes from one of the most beautiful and best purchasing areas in Germany for the sweet chestnut, the Wasgau region near Trifels Castle in the heart of the Palatinate Forest!Year after year with the end of the vegetation phase from October, November onwards, we select together with the foresters some of these trees, sometimes several hundred years old, under the aspect of sustainability and climate protection, in order to produce especially valuable wine and distillate barrels from them.By the way, the chestnut was the tree of the year 2018!The fruit of the trees is also used in culinary delights, whether in soup, bread or in some game dishes. The barrel is produced out of kiri wood in our cooperage. Kiri wood is a highly aromatic wood with considerable cellulose and lignin content. Paired with heat-reduced toast, this ensures a significant splitting of the sugar molecules on the surface of the wood while at the same time preventing guaiacol smoke aromas. The result are wooden barrels that offer strong flavours in the form of sweetness, vanilla and fruit when matured with distillates, wines or beers. Our production of kiri wood barrels is another one of our innovative ideas.  Widely unknown, the kiri is a cherry tree originating from Asia and is the fastest growing tree in the world. German innovation companies are now also planting this special tree under optimal growth conditions. Growing up to 5 metres per year, the kiri tree produces wood at 10 times the rate of oak. Although the production of kiri barrels is still in its very early stages, they could in the future be a complement to barrels made from more widely known woods. The wood comes from sustainable cultivation and is both air and kiln dried. Made from wild cherry tree trunks of the bird cherry Prunus Avium. The barrels are fitted with hot-dip galvanized hoops, lightly toasted on the inside. Cherry is still the distiller’s most favorable taste. And that not only because of the fruit’s fertility but also because it is an inherent part of the culinary culture of Southern Germany and Switzerland. Since 150 years, the particular climatic conditions there and the soil conditions that the cherry trees need to enforce the fruit’s most aromatic evolvement have been and are still appreciated. The sweet cherry has not for nothing been named tree of the year 2010. It is a stone fruit and belongs to the rose family. The “kirsch” is characterized by its complex taste that takes long at its end as well as the decent and subtle flavor. Initiates describe the favor during tastings often as fleshy, fruity, chocolate, sourly aromatic, juicy, lusty or nuttily aromatic. The most crucial point for the distillers is, however, also the question if “stonetone”, i. e. an almond or marchpane flavor is desired. The question if this flavor or homogenous kirsch with a discrete fruit nature should be pursued is highly discussed. Thankfully one should say. Cause: As is generally known, tastes are different.  Note: Cherry wood in the area of distillate is not always easy to process, this requires the growth forms of the cherry tree.To support the tightness, we paint the small cherry wooden barrels just like our large barrels with a breathable, water-soluble lacquer, which meets all certification requirements in the food industry and barrel construction! Please note, the content indicated for wooden casks do not correspond with net capacity. The capacity can be higher or even less. Balances are not reason for reclamations.

Barrels from mulberrywood are excellent for aging plum or other stone fruits. A very golden colour and sweet flavours are characteristics after aging. Recommended also for pomace or grappa.Mulberry wood, one high-aromatic wood combined with a high color yield during the maturation in the barrel. Originally this wood has been produced from excellent wine barrels and it presents a special freshness and a flavor of fruits for weeks during the summer. Mulberry wood is well-suited for aging of the plum distillate or some other stone fruits. It provides a deep golden-brown color and a sweet aroma during the maturation. It is also ideal for aging of Grappa. The fantastic results are meanwhile being clearly different from cider brandy of stylistic Calvados.In contrast to our other wooden aging barrels, these mulberry barrels have been lacquered with a certified, breathable clear coat which supports the tightness of the mulberry barrel, which is not at all easy due to its characteristics. This barrel hereby provides a slightly lower microoxygenation.The barrels up to 20 l are equipped as standard with a rack. Please select under accessories if you wish to order a rack, as well as a wooden or stainless steel spigot.Please note, the content indicated for wooden casks do not correspond with net capacity. Oak barrel 250 l Mizunara Oak

These barrels made of Japanese oak are suitable for a long storage of distillates. The Japanese oak, or Mizunara oak (Quercus Crispula), shows some peculiarities when compared to its European or American relatives: It very rarely grows straight, but almost always has a twist, which makes it very difficult for the cooper to build a barrel from this wood. The aromas that this wood gives off are very intense, especially in the beginning. The fine aromas develop only after a longer storage. But then it shows a unique sweet and spicy taste profile, which is due to the lactone ratio and the high vanilla content of the oak. Aromas that come from the Mizunara Oak are Kara (a kind of oriental incense), sandalwood and coconut. A real specialty for your distillates! These barrels were made in our cooperage from wild pear tree trunks Pyrus pyraster.The barrels are fitted with hot-dip galvanized hoops and are lightly toasted on the inside. Note:Pear wood in the distillate sector is not always easy to work with, due to the way the pear tree grows.To support the tightness, we varnish the small pear tree barrels, just like our large barrels, with a breathable, water-based soluble varnish that meets all certification requirements in the food industry and in barrel construction.Please note that the nominal size of wooden barrels does not always correspond to the net content, which may be higher or lower. Deviations do not constitute grounds for complaint.

A barrel made in our cooperage under our own brand EDER - FassStolz®. The barrel consists exclusively of the air-dried deciduous wood of the Elsbeere (Sorbus torminalis). The special distillate barrel is equipped with hot-dip galvanised hoops, treated with a breathable, food-certified glaze on the outside and lightly toasted on the inside.Origin: Germany from certified forestryThe Elsbeere, among other things also "beautiful Else" called, is a rare deciduous tree species. It is one of the most expensive deciduous trees and provides a very high-quality wood of light white-yellowish to slightly reddish colour. Wild Service Berry wood is heavy, hard and tough and has comparable properties to oak.The delivery does not include barrel storage or rack.
