This rum from the picturesque holiday island of Fiji was distilled in both pot stills and column stills. It was then aged for two to three years in American bourbon barrels.

It impresses with its balanced harmony of bitterness, sweetness, and spicy depth. With our Boulevardier Cask 30 L – Kiri Wood, we have elevated this classic to an entirely new level of maturation. For this special cask project, a pre-mixed Boulevardier was matured in a 30-liter barrel made from high-quality Kiri wood. Brandy is somewhat easier and more accessible to enjoy as Cognac, certainly also conditioned as already mentioned by the storage in American oak barrels, which by nature already give a very large vanillin share to the distillate during maturation and finally the influence of sherry from these barrels - it is the sweetness that is associated with this and makes the brandy a favorite not only among connoisseurs! From our point of view, one of the most aroma-rich barrels for restocking with a profound finesse, a mouth caressing for the subsequent distillates and beers in the restocking.
Aromas of baked apples, cinnamon and nuts, as well as vanilla flavours from the toasting have an effect on the nose when the bung is open; the fruity apples and pears are clearly perceptible in the undertone.Generally spoken, Calvados could be described as "apple brandy from Normandy". But this rather sober formulation does not do it justice in any way. As with many other distillates, there is a very special philosophy behind Calvados. First of all, there are the 11 departments in Normandy, which are the only ones that have the right to use the name "Calvados". There are only exactly 48 varieties of apples that are allowed to be produced - for comparison: in Europe alone there are almost 20,000 varieties of apples. These apples are then pressed into cider after harvesting - already here the recipe plays a special role: exactly 40% bitter or bittersweet, 40% sweet and 20% sour apples are used to achieve the desired taste. The cider obtained is quite tasty, with a maximum of 5% alcohol but still too weak for the (French) palate.So the cider is now fermented in tanks. Depending on the department and taste of the distiller, this takes between 21 and 48 days. Only then is the actual calvados distilled. In a special procedure it gets its own special note, which is further refined by the storage in wooden barrels. The barrel maturation lasts at least two, in some cases even many more years. The longer the storage in wooden barrels (which are also made exclusively from French oak), the more aromatic the calvados becomes. STR Cask - Shave, Toast, Re-charred. A cask that offers a combo of fresh Virgin Oak and first-fill red wine cask. As in new oak casks, the whiskey matures faster than in used casks. It still benefits from the fruity red wine notes of the pre-ageing. Dr. Jim Swan, a chemist and biologist by training and a passionate whisky expert, developed this special process. ShaveThe first step is to "shave" the cask. First, the cask is opened and the inner layer, heavily saturated with red wine, is scraped out. This gives the cask a combination of light red wine aromas and fresh oak (virgin oak).ToastThe exposed interior of the barrel is now toasted anew, by burning oak chips from old whiskey barrels.
