The wood originates from very fine-pored trees that grow in the forests of Minnesota, Iowa, Missouri, Ohio and Kentucky. Before being stored outside, specialists in Perryville, Missouri examine the wood. The wood is then brought to our cooperage in Napa, California. According to the traditional method of SEGUIN MOREAU barrels are being produced.
The timber and its sensory characteristics
American oak contains Methyl-Octalactonisomer, 2 - 5 times more than European oak. This substance gives the American oak a high aromatic potential.
The reduction of Polyosides during the toasting process results in larger proportions of Furan and enol molecules that produce the especially appreciated "toasted" character.
Our recommendations of usage
Due to the high percentage of flavors and a low proportion of tannins, barrels made out of american oak are recommended to be used for short maturation periods. This allows reducing tannins, wheras the aroma of the wine increases. Recommended for Chardonnay, Zinfandel, Syrah and Bordeaux wines.
