Ash wood (Fraxinus excelsior), for maturing distillates such as grain and fruit brandies. Without the release of colour, this wood ensures balanced ripening through a controlled micro-oxygenation without colouring. Ash gives off minimal to no colour at all.
The distillate matures in its original state and becomes pleasantly soft.
