The purpose of fermentation tubes, when filled with a suitable barrier liquid, is to protect fermenting and fully fermented beverages and mashes from the ingress of air and thus from microorganisms requiring oxygen as well as from the dust-damaging influence of atmospheric oxygen and fruit flies, but at the same time to allow the fermentation carbon dioxide that forms to escape. Thus, fermentation tubes also allow easy monitoring of fermentation.
The larger the fermentation or storage vessel, the larger the fermentation tube should be. Stormy fermentations and storage vessels with large headspace require larger equalizing vessels. Space conditions around the bunghole: Fermentation tubes with extended or sloping shafts are intended for little free space, e.g. low room heights or fermentation and storage tanks stacked on top of each other in a compound.
